Abuelita's Ground Beef and Potato Flautas

Equipment

  • 1 Mixing Bowl
  • 1 12 QT Pasta/Steamer Set
  • 1 Spatula
  • 1 Baking Sheets and Cooling Racks
  • 1 Cutting Board
  • 1 Knife
  • 1 15 inch Cast Iron Skillet
  • 1 Kitchen Tongs
  • 1 Vegetable Masher

Ingredients
  

  • 4 each Russet Potatoes
  • 1 tsp Sea Salt amount is to taste
  • 1/2 lb Ground Beef I used 80/20
  • 1 tbsp Garlic Salt amount is to taste
  • 1 cup Corn Oil enough to cover skillet and a little more
  • 10-12 each Tortillas

Instructions
 

  • Fill a large pot with water and place the whole potatoes (with skin on) in the water.  Bring the pot to a boil and cook potatoes until tender; approximately 30 – 45 minutes (depends on size of potatoes).  Once potatoes are tender, remove from water and let them sit until cool. 4 each Russet Potatoes

  • While potatoes are boiling, cook the ground beef in a large skillet until brown.  Add garlic salt to taste.  Set ground beef aside. 1/2 lb Ground Beef, 1 tbsp Garlic Salt

  • Once potatoes are cool to the touch, peel off the skins. Cube potatoes.
  • Place peeled, cubed potatoes in a large bowl and roughly mash until there are small chunks; add salt to taste.  1 tsp Sea Salt

  • Add the cooked ground beef to mashed potatoes and mix together.
  • In a large skillet, heat up enough corn oil to cover roughly half the flauta when frying. 1 cup Corn Oil

  • Place a line of ground beef and potato mixture on one side of the tortilla and roll it up.  Place the flauta seam side down in hot oil to fry.   You know oil is hot if you sprinkle a little bit of water into the oil and it sizzles.  Repeat until skillet is full; cook 3 – 4 at a time. 10-12 each Tortillas

  • Let the flautas cook and crisp up on both sides; turn flauta if needed to cook all the way through.  Remove from oil and place on a wire rack with a baking sheet underneath to allow excess oil to drain off.
  • Continue to roll and fry flautas until all the mixture is gone.
  • Eat up those bad boys!
